I’m a sucker for a good Facebook Reel. They’re short, snappy, and often full of great ideas. Recently, I stumbled upon a recipe for pork tacos that looked too good to pass up. Intrigued by the combination of sweet and spicy flavors, I decided to give it a try.
Ingredients:
* 5lb pork butt, cubed into 3″ by 3″ portions
* A few stalks of green onion
* 1/4 bushel cilantro
* 2 tablespoon minced garlic
* 1 mango
* Half of a pineapple
* 1/4 small bottle of Dan-O’s Chipotle seasoning
* 2 tsp of smoked paprika
* 2 habaneros
* 4 small jalapenos
* 4 rehydrated ancho peppers
* 1 12oz bottle of Mandarin Jarritos
Instructions:
* Prep the Pork: Cube the pork butt into 3″ by 3″ portions.
* Blend the Magic: Add the green onion, cilantro, garlic, mango, pineapple, chipotle seasoning, smoked paprika, habaneros, jalapenos, ancho peppers, and Mandarin Jarritos to a blender and blend until smooth.

* Instant Pot for the Pressure: Add the pork and the blended sauce to the Instant Pot and pressure cook for 1 hour and 30 minutes.

* Strain that Sauce: Strain the leftover cooking liquid to separate the liquid from the solids.
* Griddle Time: Heat your Loco flat top griddle (or BlackStone, or whatever brand you have) to 375 degrees Fahrenheit (call it medium/high). Dip street-style white corn tortillas in the strained sauce and grill them until they are getting a little crispy.

* Build the Taco Base: Grill the pork on the Loco flat top griddle. Once the tortillas are getting toasty, flip them and add the pork to the tortillas, top with queso fresco. Let them sit a minute to crisp the outside of the tortillas.

* Head back to the Kitchen: Continue to build with mango, pineapple, cilantro, and pickled red onion.

The Verdict:
These tacos were a revelation! The combination of sweet, spicy, and smoky flavors was incredible. The Instant Pot made the cooking process incredibly easy, and grilling on the Loco flat top griddle added a nice crispy flavor to the tortillas.
While this recipe isn’t the quickest, the flavor payoff is well worth the wait. I can’t wait to try this recipe again with different meats like beef or chicken.
